Crumpet & Jam Pudding

Ingredients

  • 6 crumpets sliced in half to make half moons
  • 2 large eggs
  • 400ml double cream
  • 100g caster sugar
  • 6 tbsp Chivers Raspberry Jam
  • 1 punnet of fresh raspberries
  • Icing sugar for dusting

  1. Lay crumpets into an oven safe dish.
  2. Whisk together eggs, cream and caster sugar. Pour over the crumpets and leave to soak for 30 minutes.
  3. Preheat your oven to 180C (350F).
  4. Dollop jam in between the crumpets. Add the raspberries in the way!
  5. Bake in the preheated oven for 35 – 40 minutes; until bubbling and golden. Allow to cool for 10 minutes.
  6. Dust with icing sugar and serve!
