Jam Filled Muffins


1 jar of Chivers Strawberry or Raspberry Jam – reduce amount depending on preferred level of sweetness

250g plain flour

3 teaspoons baking powder

1/2 teaspoon salt

100g caster sugar

1 egg, beaten

175ml milk

4 tablespoon vegetable oil

Icing sugar to dust


  • Pre heat your oven to about 180c.
  • Prepare a greased muffin tin or simply line with paper cases.
  • In a large bowl stir together the flour, baking powder, salt and sugar creating a small well in the middle.
  • In separate bowl beat the egg and mix in the milk and oil.
  • Pour all this into the well in the flour mixture.
  • You will need to mix quickly and lightly until combined, but do not beat. Gently stir in jam, you don’t want to over work the mix as this may affect the muffins rising.
  • Don’t worry if the mix appears a little lumpy.
  • Finally, pour mix into your prepared muffin tin and bake at 180c for about 25 minutes – you want to make sure the muffin tops are golden.
  • Once cooled sprinkle with icing sugar and serve.
