Lemon Curd Eton Mess


  • 400ml double cream
  • 1 tbsp icing sugar
  • ½ jar of Chivers Lemon Curd
  • 4 medium meringue nests, smashed
  • 8 regular marshmallows, chopped
  • 2 chunky buttery shortbread biscuits, crushed
  • Raspberries to serve, optional


  1. Place lemon curd into a bowl and give it a little beating with a spoon to soften it up.
  2. Beat double cream and icing sugar in a large bowl or jug with icing sugar until it just holds a figure of eight.
  3. You can serve these up in glasses or in bowls. Either way, layer up cream, meringue, biscuit, marshmallows and lemon curd. Repeat once more and serve! A little extra lemon curd on the side and some fresh raspberries for a pop of freshness are optional, but recommended additions!
