Lemon Squares


A zesty Chivers Lemon Curd inspired recipe that makes for the perfect tea-time treat!

1 jar Chivers Lemon Curd

1 Fresh lemon

115g Unsalted butter, cut into cubes

95g Sugar

175g Plain Flour

1 Teaspoon of salt

To decorate

Icing sugar for dusting



  • Into an electric mixer or electrical hand mixer add the butter, sugar, flour and salt. Blitz until the mix combines to form a soft dough.
  • Remove dough from mixer and press into an 8×8 baking tin lined with grease proof paper.
  • Evenly spread out the dough into the bottom of the tin.
  • Pop into preheated oven at 180c (160c if fan assisted) for approx. 10-12 minutes.
  • Remove from oven and allow to cool but do not remove from the baking tin.
  • When cooled slightly, open your jar of Chivers Lemon Curd and scoop out into a mixing bowl. Grate the lemon rind into the bowl then squeeze to add 2 tablespoons lemon juice before mixing together.
  • Generously spread this lemon curd mix over the top of the baked base.
  • Allow to set, then cut into squares dusting with icing sugar before serving.
