Marmalade Glazed Roast Carrots & Red Onions

Ingredients

12 medium-sized carrots

4 red onions, quartered

3 tablespoons olive oil

3 tablespoons Chivers Thin Cut Marmalade

salt & pepper, to taste

Preparation

  1. Preheat oven to 190 degrees
  2. Cut the carrots into chunky matchstick shapes lengthwise. Place on a roasting tray with the red onion.
  3. In a bowl mix together the oil, marmalade, salt, and pepper, and drizzle over the carrots, and toss to evenly coat.
  4. Bake until golden. This will take about 20 minutes, turning halfway.
