Raspberry Jam Eton Mess


2 tbsp Chivers Raspberry Jam

1 punnet of fresh Raspberries

300ml whipping cream

1 tsp vanilla extract

1 heaped tsp icing sugar

4 ready made meringue nests, roughly crushed

Blueberries & flaked almonds to decorate


  1. In a mixing bowl, whisk the cream, vanilla extract and icing sugar until it forms soft peaks.
  2. Gently fold in the Chivers Raspberry Jam, crushed meringues and the raspberries.
  3. Divide the mixture between the serving glasses and dress with blueberries & flaked almonds.
  4. You can then simply pop these into the fridge until you are ready to serve.
