Raspberry Jam Tartlets


  • 16 Small Pastry Tartlets
  • 240g sour cream
  • 250g mascarpone
  • 240ml double cream
  • 50g icing sugar
  • 4 tbsp Chivers raspberry jam
  • Fresh raspberries, to serve


  1. Add cream and icing sugar to a large bowl. Mix with an electric whisk until soft peaks form.
  2. Add raspberry jam, sour cream & mascarpone and beat until just combined.
  3. Spoon mousse into pastry tartlets.
  4. Refrigerate until needed. Before serving top with a fresh raspberry
