135g pack of Chivers Strawberry jelly tablets
600g frozen raspberries
1 teaspoon of vanilla extract
2 tbsp icing sugar
170g can of Evaporated milk
Fresh Strawberries or Raspberries to decorate (optional)
Dissolve the Strawberry jelly in 300ml boiling water. When dissolved pour the jelly over the frozen raspberries.
Whizz the mix with a stick blender until combined and the fruit is squashed.
Using a sieve push the mixture through to get rid of the raspberry pips.
Stir in the sugar.
In a separate bowl, whisk the evaporated milk and vanilla extract to a foam and then hand whisk in the setting Strawberry jelly.
Pour the strawberry mousse into your serving dishes and leave to set in the fridge.
Top with Strawberries before serving.
